PANEER –Dhania soup



Recipe name- PANEER –Dhania soup  

Ingredients-2 tsp butter
1tsp cumin seeds, 1/4chopped carrot
2-3 cups whey
salt and black pepper powder and to taste
2 tbsp finely chopped coriander leaves with soft stems ,1/2 cup paneer cubes cut into diamond shapes,1tsp corn flour
To Garnish- chopped coriander leaves and black pepper powder
Method - Make paneer at home, to curdle milk for paneer, add citric acid or lime juice to heated milk. Strain the curdled milk through a muslin cloth and squeeze out all the whey. Cut the paneer in cubes or in diamond shape .Save the water from paneer. Take the buter in the pan . Heat the butter l and add the cumin seeds.put the chopped carrot and fry for few min. add the paneer stock, add salt, black pepper powder and stir again. Mix corn flour in 4tbsps water and mix well.Add this mixture to soup and stir constantly. When you see the bubbles  add paneer cubes and boil for few min.Add coriander stems and cook for 30 seconds. Remove from heat. Garnish with chopped coriander leaves and serve hot.
Tip - Good paneer can be made from milk which contains 5 % more fat than normal milk. therefore,buffalo milk is more suitable for preparing paneer..U can use French beans, corn kernels also  to soup .

Makhmali kebab Tukri


Ingredients -1 cup Hung Curd, 1tbsps processed cheese, ¼ cup grated soft paneer, ½ cup finely Chopped Green, Red & Yellow Capsicum, 1 - 2 tbsp Finely Chopped, Coriander Leaves, 1 tsp Cardamom Powder, ½ tsp or 1tsp Chat Masala, Salt and white Pepper Powder to taste, 2-tsp Rice Flour, Oil for deep Frying
For Garnish: Cucumber flower, Tomato leaves, Lemon slice Pudina leaves To serve with -Green Chutney with pomegranates seeds 

FOR MAKING slurry -1 Tbsp. refined Flour, 1.5 Tbsp. Corn flour, ¼ tsp. salt, 2 .5 to 2.5 Tbsp. Water
To coat -1cup dried bread crumbs mixed with seasoning and 2tbsps dried pudina powder 

Method -In a bowl combine all the ingredients except oil and rice flour Mix till all the ingredients come together to form a thick dough. Use your hands to shape this paste into oval, flattened patties. Dust these patties with a little rice flour. Keep them in refrigerator for 30 minutes. Make slurry with all slurry ingredients. Dip the rolls in slurry with one hand and coat in coating breadcrumbs- pudina mixture well. Heat oil and deep fry, till the outside becomes golden brown and crisp. Cut into slices. Serve hot Makhmali kebab Tukri.

Curd seviyan

Ingredients-1/2 cup vermicelli / seviyan, 2 cups hung curd beaten/dahi, 2tbsps grated cucumber, salt to taste 

For tempering -2 tsp oil, 1red chilli whole, ½ tsp mustard seeds, A few curry leaves, A pinch of asafoetida

To garnish -A few roasted cashew nuts, 2 tbsp pomegranate seeds, chopped coriander leaves and carrot leaf to garnish 

Method- Dry roast vermicelli and keep aside. Bring 1 cup of water to a boil. Add the roasted vermicelli to the boiling water. Let this boil on medium heat till vermicelli is cooked and the water dries up. Do not overcook. Remove the cooked vermicelli and keep aside to cool down uncovered. Take curd in a bowl. Add salt and beat the curd till it turns smooth. Add the cooked vermicelli, grated cucumber to this curd and mix well. Heat oil in a pan for tempering. Add mustard seeds and asafoetida. When mustard seed splutter, add curry leaves and red chilli. Sauté for a few seconds and remove from heat. Add the seasoning to the prepared vermicelli curd mixture and mix well. Garnish with pomegranate seeds, roasted cashew nuts, chopped coriander leaves and carrot leaf.

Cucumber-curd -Healthy salad (1-2 ka 3 recipe)



Ingredients –
For salad -½ cup overnight soaked and sprouted whole moong,¼ cup grated carrots , ¼ cup grated cucumber,1 tsp chopped coriander leaves , ¼ cup grated low fat paneer 

For dressing -¼ cup chopped spring onion,1 tbsp oil,1 tsp chopped garlic (optional), ½ tsp salt, Black pepper powder to taste ,1 tsp white vinegar, ½ cup low fat hung curd 

For plating -thin slices of cucumber, Salt and pepper to taste, ¼ cup soaked basil seeds ½ tsp degi mirch, 1tsp lemon juice 

For Garnish -Few garlic green stalk, fresh pomegranates seeds, tomatoes and grated cucumber and carrot. 

Method- To prepare salad in a bowl add all salad ingredients. To prepare dressing in a blender blend all dressing ingredients. Mix the dressing in the salad. For plating On the cucumber slices apply salt and crushed black pepper and keep for 5 minutes. make rolls of the cucumber slices. Stuff the prepared salad in the cucumber roll and keep the roll on the plate. Make such more cucumber rolls with remaining ingredients.
 For garnish and plating - add lemon juice and degi mirch to the soaked basil seeds. Put this mixture on the cucumber rolls. Garnish with garlic green stalk, fresh pomegranates seeds tomatoes and grated cucumber and carrot.

Fruity delight


Ingredients-20 cherries, 200ml milk,2tsp vanilla custard powder,1/4cup whipped cream, ¾ tsp  agar-agar powder, about 1/2cup powdered sugar or to taste ,1/2cup mango puree
To Decorate -cream and cherry sauce
 Method -For-bottom part -In a pan add20 cherry chopped and deseeded, add 3to 4 tbsp sugar and ¼ cup water. Cook till sugar dissolves and gets well mixed. Mix well. Blend it once and sieve it. In a small cup take 2 tbsp water add 1/4 tsp agar agar  powder. Let it dissolve and stand for 2 to 3 minutes. Take the cherry puree back in the pan add the dissolved Agar Agar. Cook for few minutes. Take any glass or bowl and pour the cherry jelly making liquid into it. Let it set in the fridge
For the – Medium part - For second part: Making custard-Boik milk add4tsp sugar or to taste to it. Mix custard powder in 2-3 tbsps water and add to boiling milk. Cook, stirring continuously till it thickens. Let it cool.Mix whipped cream .Keep in refrigerator to set .

For- top layer - In a small cup take 2 tbsp water add 1/4 tsp agar agar  powder. Let it dissolve and stand for 2 to 3 minutes. Take the mango puree in the pan add the dissolved Agar Agar. Cook for few minutes with 2tsp sugar. Cool a little and Spread mango jelly over set custard layer.  Set in the refrigerator and cool .Decorate with cream and cherry sauce. Serve cold.

mocha –Chocó chips



Recipe name-
Ingredients-
1/2cup fresh cream,
2tbsps dark grated chocolate
2tbsp coffee powder
1 tbsp brown sugar or to taste
1/2 tsp cinnamon powder
2 cups milk
1/4tsp vanilla essence
1tsp chocolate sauce
Method –Cook cream in low heat. Add grated chocolate till it melts. Combine the coffee powder, brown sugar, cinnamon powder and in a small bowl and mix well. Keep aside. Heat the milk in a deep non-stick pan on a medium flame for 4 minutes or till it starts boiling. Add the coffee powder mixture and chocolate sauce. Mix well and cook on a slow flame for another 2 to 3 minutes. Add cream –chocolate mixture to milk mixture. While stirring occasionally on low heat . Add the vanilla essence and mix well. Cook for 3 minutes. Serve topped by grated white chocolate and cinnamon stick .
