Potato –cheese –noodles wrapped Bati



Recipe name-Potato –cheese –noodles wrapped Bati
Ingredients
1/4 cup grated processed cheese
1 cup boiled  mashed potatoes
1/4 cup boiled sweet corn kernels, coarsely crushed (makai ke dane)
salt and black pepper  to taste
1/2cup bread crumbs
¼ cup corn flour slurry
1 cup boiled noodles for coating
oil for deep-frying
To garnish –star of cream cheese, tomato mini roundels
For Serving-mixed fruit sauces

Method -Combine all the ingredients in a deep bowl except boiled noodles, corn flour slurry and oil .mix well. Divide the mixture into 6-8 equal portions and shape each portion into a flat round tikki.dip each tikki in corn flour slurry and coat with boiled noodles.Heat the oil in a kadhai and deep-fry, a few cutlets at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper. Garnish with cream cheese, tomato mini  roundels. Serve immediately with mixed fruit sauces.

sweet poodas(traditional recipe )

On Ahoi Ashtami mothers hold a fast from dawn to dusk for the well-being of their sons. Fast is broken during twilight after sighting stars in the sky. This day is also known as Ahoi Aathe because fasting for Ahoi Ashtami is done during Ashtami  Tithi which is the eighth day of the month.
We give –Bayna to mother in law or  sister in law as a symbol of respect .
I made sweet  poodas for bayna (Gulgule- poodas or puas  in the shape of a Pakoda ) In western Uttar Pradesh  these Sweet Poodas are also prepared during Pujas or religious rites. Here is recipe

Recipe name - sweet  poodas(traditional recipe )
Ingredients -Wheat flour -  1  cup
Sugar - less than 1/2 cup or to taste
Saunf,melon seeds, chopped cashewnutsto taste  (about 4tbsps)
Milk/Water –about 1 cup
Oil or Ghee to fry.
Method –Sieve flour in a utensil using a strainer. Put sugar in milk/water and cook it till it dissolves. Cool. Add flour in this sweet milk/water and mix well .The mixture for Poodas  has to be thick like the one used for Pakoda. Cover the mix for 10 minutes allowing the flour to ferment. Add Saunf, melon seeds, chopped cashew nuts to taste.  Now beat this mix properly. Pour oil in a pan(kadhai) and heat. When oil is sufficiently heated, then take little amounts of mixture at a time and put it in hot oil.  In this manner take mixture in your hands again and put 5-6 or as many in proportion to the oil, in the pan. Fry Poodas on a medium flame till they turn red then take out. Fry all poodas with remaining batter similarly.
