Moong dal- Dalia khilwa Khichdi



Ingredients- Broken Wheat ) - ½ cup Washed split moong dal(yellow moong dal ) - ½ cup vegetables of choice -1cup Chopped Green chili – ½ tsp Water – 2 cups olive Oil or Pure Ghee– 1 tbsp Heeng powder (asafoetida) – ½ pinch Cumin seeds – 1 tsp Salt and garam masala powder to taste.lemon slice ,Tomatoes and chopped coriander leaves to garnish

Method – Wash and soak moong dal and dalia for 30 minutes separately. Leave in a colander for 5 minutes. Heat ½ tsp of ghee or oil in a pan and add dalia and moong dal mixture. Fry it till it turns light brown. Remove the mixture from heat and set aside. Again heat the pan with remaining ghee or oil. Add cumin seeds, asafoetida powder. When they crackle, add the chopped vegetables (chopped beans, capsicum, carrot, green chili and green peas). Mix well and keep stirring for 3-4 min on medium heat. Add dalia and moong dal mixture to it. Mix it well. Add 2 cups of water and salt according to taste. Mix it and put a lid. Let it cook for about 8-10 min at very low heat. Open and check that everything is cooked completely Garnish with garam masala powder,lemon slice, Tomatoes and chopped coriander leaves. Moong dal- Dalia khilwa Khichdi Khichdi is ready.

Steamed Paneer Dumplings In Shahi Gravy

Ingredients for gravy-4tsp eastern shahi paneer masala,1tsp cashew nut powder,1cup tomato puree,2tbsps cream,1cup milk,1tsp butter, For dumplings-150gms paneer mashed, salt and pepper powder to taste, 2tsps corn flour 

For stuffing-2tsp cashew nuts coarsely ground, raisins to taste, 2tsp mashed paneer, ginger-chilli paste and salt to taste.(combine all the ingredients) 

To garnish-red chilli tadka,green coriander leaves and red chilli flakes tomato flower 

Method --For the steamed dumplings - Mix all the dumpling ingredients well and stuff some filling. Make small balls. Steam cook-in greased idli stand kept in pressure cooker for 4 minutes. For the gravy-Heat butter in a pan, add tomato puree and cook for 2-3 minutes. Now mix all the remaining ingredients and blend well. Cook till gravy is thick. Adjust the seasoning and consistency of your choice. Pour gravy in serving dish and arrange paneer stuffed dumplings. Garnish with -red chili tadka,green coriander leaves and red chilli flakes tomato flower. Enjoy- steamed paneer dumplings in shahi gravy .

Stuffed Nan smilies

Ingredients-1tsp fresh yeast ,1 tsp sugar,100mlluke  warm water,200g refined flour ,1 tsp salt,1/2tsp baking powder ,2tbsp natural yoghurt,2 tbsp melted ghee or butter, plus extra to brush,A little vegetable oil, to grease.1 tsp nigella (black onion), sesame or poppy seeds (optional)stuffing of your choice (I made with boiled potatoes and cheese)boiled whole moong for eyes,corn kernels for teeth.
Method to make Nan dough -Put the yeast, sugar and two tablespoons of warm water in a bowl and stir well. Leave until it begins to froth. Put the flour and salt into a large mixing bowl and whisk to combine. Stir the yoghurt into the yeast mixture, then make a well in the middle of the flour and pour it in, plus the melted ghee. Mix, then gradually stir in the water to make a soft, sticky mixture that is just firm enough to call a dough, but not at all dry. Tip out on a lightly floured surface and knead for about five minutes until smooth and a little less sticky, then put in a large, lightly oiled bowl and turn to coat. Cover and leave in a dry place until doubled in size. Tip the dough back out on to the lightly floured surface and knock the air out. divide into small balls .Flatten one of the balls and or roll it into a flat circle, slightly thicker around the edge. use a round cookie cutter and cut smiles  sized rounds from half of the dough.Spread prepared stuffing in the centre of each round. Roll out the remaining dough and cut with smile cutter of same sized round in equal numbers. Keep smilies cutter rounds over stuffing and seal the edges with fork, thus give shapes of smilies to stuffed nans.keep boiled whole moong in space of eyes and corn kernels for teeth.Grease the tray and arrange smilies on tray.Bake in pre-heated oven on 180 drgree c for 7-10 minutes or till brown.
