Ingredients- 1cup
Couscous ,1tsp olive oil,2cups water,2 lemons juice or to taste, handful of raisins, ran
berry(optional) , ginger, cumin powder, cucumber, sautéed 3 colouredbell
peppers and carrots finely chopped,3/4 cup boiled corn kernels, pomegranate
seeds, salt and pepper powder .
To
garnish-cucumber,yellow bell pepper and carrot leaf.
Method- Heat
2cups of water with salt and 1tsp olive oil till boiling point. Add couscous
and cover. Let it stand till couscous is well soaked. Remove soaked couscous
into a deep bowl and fluff up with a fork. Add all the ingredients except
cucumber and pomegranate seeds. Cool at room temperature. Add pomegranate seeds
and cucumber. Keep in refrigerator to cool for an hour. Garnish with cucumber, yellow bell pepper
and carrot leaf.
